Just Like Pumpkin Pie
     without the crust. Very figure friendly (if you omit the sugar cookie)



Pumpkin Custard
1 can Evaporated Milk (no fat)
2 eggs
1 can pumpkin (15oz)
1 t. cinnamon
3/4 C. sugar
1/4 t. clove
1/2 t. ginger
1/2 t. salt
Blend all. Pour into custard dishes (6-8).
Bake for 40 minutes at 375*.
I served this with a dollop of Lite Cool Whip and a sugar cookie.

I know this is starting to look like I eat a lot of sweets, but I just HAD to have this when we went to eat at The Black Eyed Pea in Garland, Texas. It was the best banana pudding ever! The picture just does not do it justice. And by the way, Keith DID help me eat it.

APPLE NACHOS
I made these for dessert on Halloween night. Gooey goodness.

3 medium apples, cored and sliced
15 large marshmallows
2 1/2 T. butter
caramel sauce
chopped peanuts
mini chocolate chips
Halloween sprinkles

Places apples on platter. Melt marshmallows with butter, pour over apples. Drizzles with caramel sauce. Top with peanuts, chocolate chips and sprinkles.
